Screening of quality of mass consumption products such as edible oils of two regions of Burkina Faso affected by security crisis

This study addressed the sanitary quality of edible fats sold in two regions of Burkina Faso facing high security challenges. Several quality parameters were evaluated, including water content, acid value, peroxide value, soap traces, refractive index, oil color, and mineral oil content. Water content ranged from 0% to 1.10%, peroxide values from 2.98 to 27.93 mEq O2/kg, and acid values from 0.06 to 1.46 mg KOH/g. Soap traces were detected up to 60.78 ppm, and the refractive indices varied from 1.39 to 1.47. No trace of mineral oil was found. Data indicate poor overall quality of the oils, with significant variations in key parameters across cities, that is of Koupéla, Manga, and Tenkodogo. These findings highlight the need for effective food safety actions to improve fat quality and protect public health in the region.
